Description
Once our Chardonnay grapes are at the point of perfect tension between ripe fruit & bright acidity, they are picked in the early morning and arrive at the winery still cold. The grapes go directly to the press & the juice is sent to settle in chilled stainless steel tanks. We control the temperature during 3 to 4 weeks of fermentation, which allows maximum varietal expression & preserve aroma. Balanced with 15% new French oak, we use both lees stirring & malolactic conversion to enhance the wine.
