Description
In 2021 we harvested two tons from the oldest section of the vineyard on August 25th. Minimal handling in the cellar was deployed throughought vinification. Upon arriving to the cellar, the lot was assembled in tank with 100% whole clusters where it fermented with native yeasts. A total of 30 days were spent on the skins after which, the fruit was pressed and barreled down to a selection of 600-liter barrels. Èlevage lasted a total of 17 months with the first racking occurring just two days prior to bottling. The final wine was bottled without fining or filtration.
