Description
We harvested our two tons in 2021 on September 13th at a potential alcohol of 13.8%. Native yeasts were used for the fermentation and whole clusters for half of the fermenting fruit. After spending 20 days on the skins the wine was barreled down and aged in two 600L neutral Stockinger Demi-Muids. We bottled 104 cases of the 2021 Yount Mill Grenache in January 2023 without fining or filtration. A wine that’s typically ready to consume in it’s youth, the weight and structure will provide the support for 10-12 years of cellaring.
